The Western banh xeo restaurant meets Michelin standards in Hanoi

The restaurant was opened by Mr. Le Trong Quoc, or Mr. Bay, for 10 years on Hang Dieu Street. The restaurant space has two floors, accommodating about 50 guests at the same time.
Banh Xeo restaurant “Mr Bay Mien Tay” in Hanoi was added to the Bib Gourmand 2024 list by Michelin Guide for the first time – a title for restaurants with good quality food at affordable prices on June 20.
The restaurant owner wants customers to not only feel the food but also enjoy the Western atmosphere. Therefore, at each table, he spread a Southern bandana.

How Much is Banh Xeo?

Banh xeo is the dish most ordered by diners, priced from 95,000 VND to 140,000 VND, including options of vegetarian pancakes, Southern pancakes, beef pancakes, chicken pancakes and seafood pancakes. Mr. Quoc said the most obvious difference between banh xeo in the West is that the size is larger than that of banh xeo in other regions.

What is type of Banh Xeo?

In the West, banh xeo has many types of fillings, from fish and shrimp to chicken, duck, mussels or even mushrooms. Westerners also have the habit of eating vegetables grown in the garden, almost every vegetable is eaten with banh xeo. However, because the ingredients cannot be imported to Hanoi and to suit the general taste, the restaurant only sells some types of pancakes as above, served with lettuce, perilla, and marjoram.

Banh xeo is poured into a large, deep pan. Before pouring the cake, the pan is coated with oil, then the dough is poured, and an even layer of omelette is added to reduce the oil from seeping into the cake filling, causing it to be sticky.

After that, the filling is added according to the customer’s request, and oil is added to create a crispy texture. A finished pancake is about 30 cm wide, crispy, fragrant with coconut milk, has a beautiful yellow color, and does not burn due to overheating. The dipping sauce is sweet and sour, suitable for the taste of most diners.
After processing, the cake is placed on a tray, lined with banana leaves and cut into about 5-6 pieces for customers to easily roll.

A typical dish of coconut shrimp and meat salad in the West. In addition to fish, shrimp, and beef that are easy to buy in Hanoi, some ingredients such as vegetables, Sesbania flowers, Chopstick flowers, and coconut tubers are imported from the South to ensure the right flavor.

The owner shared that being on the Michelin Guide list is an honor but also full of pressure. If the number of customers increases, he worries that customer experience will be affected because of long waiting times for food.

However, he said he will make efforts to win a Michelin star in the near future. “I’m proud that the restaurant was named by Michelin, it’s recognition of my efforts,” he said.
